It is said that Naples has the best Italian\u00a0coffee even though \u201cde gustibus non disputandum est\u201d or \u201cThere&#8217;s no arguing taste\u201d. It is undisputed, however, that all Italian advertising spots for coffee are set in a Neapolitan ambiance \u2013 and there\u2019s certainly a reason for that!<\/p>\n<p>When Neapolitans say caff\u00e8, they always mean \u201ca tazzulella &#8216;e cafe\u201d, a coffee in an espresso cup. But this caff\u00e8 isn\u2019t always an espresso, because&#8230;<\/p>\n<h4>There a three ways of preparing a perfect caff\u00e8!<\/h4>\n<h4>1) Espresso (mainly in bars and restaurants)<\/h4>\n<p>The \u201ccaff\u00e8 espresso\u201d is\u00a0prepared with an espresso machine as result of an high-pressure brewing process: the coffee is brewed by forcing very hot, but not boiling water.<\/p>\n<p>A professional espresso machine is very expensive and you will find it only in bars. Anyway, in the last time there are always more \u201chome espresso machines\u201d on the market, but the results are significantly inferior than an espresso made with a professional machines.<\/p>\n<h4>2) Moka (at home with moka pot)<\/h4>\n<p>All Italians have at home the traditional aluminum coffee maker (moka pot), to <a href=\"http:\/\/www.portanapoli.com\/en\/culinary\/how-to-prepare-a-perfect-italian-coffee\/\">prepare a perfect coffee<\/a>. \u00a0which consists of three parts: the water container, the filter and the top piece of the pot. Heating produces steam and, by using pressure, the water is being pressed through the filter into the top piece of the pot.<\/p>\n<p>In Italy, normally you use the word \u201ccaff\u00e8\u201d for the coffee brewed at home with moka machine, and you say \u201cespresso\u201d when you want to mean the coffee you get in a bar.<\/p>\n<p>But Italian people use mostly the word \u201ccaff\u00e8\u201d whether at home or at bar\/restaurant. Thus, when they say \u201ccaff\u00e8\u201d, if they are at home they mean a moka coffee, if they are in a bar they mean the traditional espresso. Moreover in a bar you can get at least a dozen of different kind of caff\u00e8 like caff\u00e8 (the traditional espresso), caff\u00e8 corretto, caff\u00e8 freddo, caff\u00e8 macchiato, caff\u00e8 con panna, caff\u00e8 ristretto, caff\u00e8 lungo, latte macchiato, cappuccino, caff\u00e8 decaffeinato (and in Napoli some more caff\u00e8 typical of famous Neapolitan and Southern Italian bars).<\/p>\n<p>And if that\u2019s not confusing enough, there is a third, ancient, tradition of preparing caff\u00e8: Macchinetta napoletana, the Neapolitan flip coffee pot<\/p>\n<h4>3) Neapolitan coffee \u201cAlla napoletana\u201d<\/h4>\n<div id=\"attachment_436\" style=\"width: 185px\" class=\"wp-caption alignleft\"><img aria-describedby=\"caption-attachment-436\" decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-436\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/napoletana.jpg\" alt=\"Macchinetta napoletana the Neapolitan flip coffee pot\" width=\"175\" height=\"227\" \/><p id=\"caption-attachment-436\" class=\"wp-caption-text\">Macchinetta napoletana,<br \/>the Neapolitan flip coffee pot<\/p><\/div>\n<p>The caff\u00e8 is brewed with a macchinetta napoletana (the Neapolitan flip coffee pot), which you find exclusively in Naples.<\/p>\n<p>Today, it isn\u2019t used that often any more because it needs more time and experience \u2013 and, unfortunately, time has become a rare resource in Naples too. \u00a0The traditional \u201cmacchinetta napoletana\u201d has been replaced for the most part by the moka pot.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h4><\/h4>\n<h4>How to recognize a perfect Neapolitan coffee<\/h4>\n<p>The taste of the Neapolitan (and Italian) coffee depends on the way of preparation, water quality, and brand, of course. The look and the smell of a caff\u00e8 reveal its quality. A good caff\u00e8 has a nut-brown colour, a creamy consistency, and a very aromatic smell. When you stir in the sugar, which tends to sink slowly to the bottom of the cup, you get a cream. The temperature of the caff\u00e8 is important, as only hot caff\u00e8 can bind the flavouring substances.
