We tell you the secrets\u00a0of its preparation with the traditional moka pot.<\/strong><\/p>\n<p>The <a href=\"http:\/\/www.portanapoli.com\/en\/culinary\/three-ways-to-prepare-a-neapolitan-coffee\/\">moka pot<\/a> consists of three parts: the water container, the filter and the top piece of the pot. Heating produces steam and, by using pressure, the water is being pressed through the filter into the top piece of the pot.<\/p>\n<h4>The preparation of a \u201cperfect\u201d caff\u00e8 is easy if you pay attention to the following rules<\/h4>\n<p>1. <strong>Choose a high-quality brand you like and keep the coffee ground in a sealable glass- or ceramic container.<\/strong> The coffee ground should be kept in a hermetically sealed container and away from food emitting strong odors (teas, cheeses ,&#8230;) because the coffee has the property of absorbing odors, which would alter the aroma.<\/p>\n<p><strong>2. Use fresh water with a low lime content, which has to be cold<\/strong>. Don\u2019t cut the preparation time by using water that has already been heated!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-445 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_acqua.jpg\" alt=\"(3)\" width=\"100\" height=\"90\" \/><strong>3.<\/strong> <strong>Fill the water container completely with water<\/strong><br \/>\nAttention: The water level should never be higher than the valve of the water container, or you get a tasteless \u201cdiluted caff\u00e8\u201d (long coffee as Italian say).<\/p>\n<div class=\"wp-caption-dd\"><\/div>\n<div class=\"wp-caption-dd\"><\/div>\n<div class=\"wp-caption-dd\"><strong><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-447 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_riempito.jpg\" alt=\"\" width=\"97\" height=\"84\" \/>\u00a04. Fill the filter with an ample amount of coffee<br \/>\n<\/strong>and don\u2019t press the coffee ground (some Italians put three holes in the coffee ground in order to enhance the taste: this should facilitate the ascent of the water). The amount of the coffee ground is already determined by the capacity of the filter. Always prepare the maximum amount of coffee as indicated on the moka pot. Even when you need less, the water container and the filter always have to be completely full, otherwise you will get a long coffee, while Italian like strong coffee.<\/div>\n<div class=\"wp-caption-dd\"><\/div>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-446 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_buchi.jpg\" alt=\"\" width=\"98\" height=\"100\" srcset=\"https:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_buchi.jpg 98w, https:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_buchi-45x45.jpg 45w\" sizes=\"(max-width: 98px) 100vw, 98px\" \/><strong>5. \u00a0Put the moka pot on the burner<br \/>\n<\/strong>(electric kitchen stove: approx. level 2). The burner mustn\u2019t be too hot because the water has to rise slowly. The moka pot has to stay on the burner until the coffee rises through the filter into the top piece of the pot. When it does, it makes a bubbling sound that you can hear.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-448 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_uscita.jpg\" alt=\"\" width=\"98\" height=\"80\" \/><strong>6. \u00a0Open the lid of the machine as soon as the coffee starts rising.<\/strong><br \/>\nThat way the condensation water doesn\u2019t get into the coffee (otherwise that might dilute the coffee).<\/p>\n<p>&nbsp;<\/p>\n<p><strong><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-449 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_uscito.jpg\" alt=\"\" width=\"98\" height=\"101\" srcset=\"https:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_uscito.jpg 98w, https:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_uscito-45x45.jpg 45w\" sizes=\"(max-width: 98px) 100vw, 98px\" \/>7. Take the moka pot off the burner several seconds before all the water has completely risen<\/strong> (it doesn\u2019t matter if some of the water is left in the water container). Attention: The coffee must not start boiling!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-450 alignleft\" src=\"http:\/\/www.portanapoli.com\/en\/wp-content\/uploads\/2017\/01\/caffe_servito.jpg\" alt=\"\" width=\"98\" height=\"80\" \/>8. \u00a0Drink the caff\u00e8 hot and add sugar to your taste.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>9. \u00a0Clean the machine well with hot or boiling water,<\/strong> but don\u2019t use dishwashing liquid and never wash the pot in the dishwasher.<\/p>\n<h4>Finally some\u00a0maintenance tipps for the moka pot<\/h4>\n<p>During use on the interior walls of the water container,\u00a0filter and upper chamber is deposited a thin layer of greasy residue of coffee. This coating protects the coffee from the contact with the aluminum walls, which might otherwise give a metallic taste to the coffee. For this reason you should not use the dishwasher or soap to wash the moka pot, otherwise you could remove that layer of greasy residue.<\/p>\n<p>If you get a new moka pot or you replace the rubber seal, the coffee could get a bad taste caused by new rubber or uncoated aluminum walls. In this case use the moka pot two\/three times with water only or with used coffee ground.
